Recipe for One Pot Pasta/ Tomato & Basil [Tess Barwikowski]
12 oz penne
12 oz cherry tomatoes (halved or quartered)
1 onion thinly sliced
4 garlic cloves, thinly sliced
1/2 tsp red pepper flakes
Basil
2 tbsp EVOO
Salt and pepper
Parm cheese
4 1/2 cups of water
In large pot, combine pasta, tomatoes, onion, garlic, flakes, basil, oil, 2 tsp salt, 1/4 tsp pepper and 4 1/2 cups of water.
Cook all, stirring frequently, until water has almost evaporated (about 9 minutes).
Serve with oil and cheese.
